Let's Bake: Vegan Chocolate Cupcakes w/ Chocolate Mocha Buttercream

I didn't mean for two posts in a row to be about baking, but why not. I love the recipe for these cupcakes because it doesn't require any type of plant base milk. I have a friend Leah (mentioned in previous post) that has a soy allergy. She isn't Vegan OR a lover of sweets but she indulges when I bake for her. Half a dozen of these cupcakes went to her and the other half to my neighbors.

This is actually the best buttercream I have ever made. It's a basic buttercream with 3 tablespoons of pure cocoa powder and a vanilla and instant coffee syrup (1/2 Tblspn Vanilla & 1 1/2 Tblspn instant coffee).
I didn't want to to give them away. Leah polished one off and loved it. YAY!!

Let's Bake:Vegan Blueberry Muffins

I LOVE to bake. My best friend likes to call me a barefoot grandma from 1902. I LOVE HER. I love to cook in general but it's baking that relaxes me. My favorite thing to make for friends and family are blueberry muffins. They're quick, easy, and I always have the ingredients in my house. Give me 35 minutes I'll give you blueberry muffins :)
A couple weeks ago I made 4 dozen muffins.
12 went to my aunt's house
12 to my neighbor (A young military couple with an adorable seven yr old son)
24 to my friend Leah's house (she has FIVE roommates)

The Recipe:
1 1/2 cups flour
3/4 cup sugar
2 tsp baking powder
1/2 salt

2/3 cup any plant based milk
1/3 cup oil

My neighbors' son Kaden is soo adorable he made me a thank you card for the muffins.

That was soooooo cuute

He his two favorite foods are blueberries and chocolate, so next time I'll make him chocolate cupcakes.

Sun Drop Soda Commercial [Hilarious]

So I'm watching MTV and this commercial comes on...



Absolute death by laughter! lol I haven't had a soda in approximately 2yrs. Dr.Pepper was my drug of choice, and it turns out Sun Drop is distributed by Dr.Pepper/Snapple. This commercial really makes me want to try this soda...just BECAUSE.

People have even made parody videos...the whole thing is just hilarious!!!

Saturday I finished one of the most remarkable books I may ever have the pleasure of reading. It took me three days, but it was worth it to say the very least.

I remember coming across a video about the book last year and making a mental note to Google more info. Well, OBVIOUSLY I forgot about it! However, browsing through my college's library, I stumbled across the bright leaf colored book(I wish I had sooner). I decided to check it out...now I'm making my mother read it(ok she volunteered to read it). It's everything I hoped it would be and MORE. If you eat ANYTHING you should read this book.

Vega-WHHATT?

I had an assignment in my English class; Write a definition essay, MLA format,no less than 3 pages. I wrote the paper on the definition of Vegan. At first it wasn't coming together. You would think that I'd be able to write a brilliant paper in an instant because It's ...my LIFE. It's always the innate things that are the hardest to write about. I asked myself "If you had to define WOMAN would it be this hard?". I answered YES.
I am a perfectionist when it comes to english papers. I have to be absolutely satisfied with my work in order to turn it in. It's more because I'm worried about how I'm represented on paper and less about my letter grade. I finished writing my paper 45 minutes before my class started. Not confident it was my best work, I decided that my paper was as good as it was going to get.
That was last Thursday. Yesterday I got the paper back. I slowy turned back the first page to see my grade, FULLY expecting no higher than a B if my professor was generous. There it was glowing and dancing off the page. I got an A. I read it over and realized it was better than I thought. My teacher even asked to keep a copy.

I'm BEYOND happy. Now I want to get it published...
